Southwestern Chicken and Pan Fries

Southwestern Chicken and Pan Fries

Fried chicken breast with a flavorful crispy coating teamed up with home-made pan fries and a side salad.

How many servings?

Ranch salad dressing
ketchup
Worcestershire sauce
lime juice
red pepper flakes
flour
olive oil
potato
onion
green pepper
red pepper
olive oil to cover bottom of skillet
side salad

Directions
  1. Mix together Ranch dressing, ketchup, Worcestershire sauce, lime juice and red pepper flakes. Pour over chicken and place in refrigerator to marinate for at least one hour.
  2. After marinating, dip chicken into flour to coat.
  3. Cook in oil over medium heat.
  4. Peel potato and cut into slices. Heat enough oil to completely cover the bottom of a skillet over medium-high heat.
  5. When oil is hot, add potato slices.
  6. Turn chicken. Continue cooking over medium heat.
  7. Turn fries to brown on both sides.
  8. When fries are golden, remove from oil and drain on paper towels.
  9. Reduce heat under chicken to low and cover.
  10. Lightly brown peppers and onion in hot oil left from potatoes.
  11. Top chicken with peppers and onion. Serve with pan fries and side salad.
