Serve this spicy ground beef and rice flauta in a pita pocket instead of a tortilla for a fun twist on a favorite Mexican dish.

water
instant rice
lean ground beef
tomato sauce
salsa
lime juice
fresh cilantro
cumin
tomato
onion
pita bread
grated cheddar cheese

Directions
  1. Heat water in a saucepan on high until boiling.
  2. Stir instant rice into boiling water, cover and reduce heat to low.
  3. Brown ground beef in a skillet over medium heat, drain fat and return to pan.
  4. Stir tomato sauce, salsa, lime juice into the skillet with meat.
  5. Stir rice into meat and sauce.
  6. Chop cilantro and add to skillet along with ground cumin.
  7. Dice tomato and onion and set aside.
  8. Cut pita bread down the center and open like a pocket.
  9. Stuff both halves of the pita bread with meat and rice mixture. Top with diced tomato and onion and grated cheddar cheese.
