Macaroni and Cheese with Ham, Applesauce Nut Muffins

A traditional favorite, Macaroni and Cheese, is delicious with ham. Serve with Lemon Broccoli and Applesauce Nut Muffins.

Applesauce Oatmeal Nut Muffins
Makes 12

3/4 cup sugar
2 eggs
1/4 cup olive oil
milk
1/2 cup applesauce
1/2 cup milk
1 1/2 cups rolled oats
1 1/2 cups flour
1 1/2 teaspoons baking powder
1 dash cinnamon
1 dash nutmeg
1/2 cup chopped walnuts
non-stick cooking spray

Directions
  1. In a saucepan, heat water on high.
  2. Meanwhile, dice ham and cheese into cubes.
  3. Add macaroni to boiling water. Cook on high until pasta is tender (about 10 minutes).
  4. In a measuring beaker, mix milk, cornstarch and pepper.
  5. Turn on oven to 350 degrees. Spray an oven-proof baking dish with non-stick cooking spray.
  6. Drain and rinse macaroni and pour into the baking dish.
  7. Add ham and cheese to macaroni and then pour milk mixture over the top.
  8. Put casserole into the oven, uncovered.
  9. Spray muffin tins with non-stick cooking spray.
  10. In a mixing bowl, combine sugar, eggs, olive oil, applesauce and milk. Mix well.
  11. Stir in rolled oats.
  12. Dump flour on top of batter and then sprinkle baking powder, cinnamon and nutmeg evenly over the top.
  13. Using a fork, blend baking powder and spices into the flour and then mix everything together.
  14. Add chopped walnuts and mix thoroughly.
  15. Using a 1/3 measuring cup, fill muffins tins. Place in oven.
  16. Remove casserole from the oven and mix well. (The cheese should be melted by now.) Return to oven.
  17. Set timer for 20 minutes.
  18. At the end of that time, chop broccoli and put it into a saucepan with a lid. Add water and heat on medium high until water is just beginning to boil.
  19. Cover tightly and reduce heat to lowest.
  20. After 5 minutes, turn off heat. Add margarine and stir to melt. Sprinkle with lemon juice and pepper.
  21. Serve with muffins and macaroni.
