Broccoli and Rice Ground Beef Casserole
Cheese and broccoli are a favorite combination with rice and ground beef in this delicious casserole.

chopped frozen broccoli

broccoli cheese soup

non-stick cooking spray
Directions
- Heat beef broth in a saucepan on high until boiling. Stir in rice, cover and reduce heat to lowest setting. Do not lift lid for 45 minutes.
- When rice has cooked for 30 minutes, brown ground beef in a skillet over medium heat. When completely brown and no more pink appears, drain off excess fat.
- Chop onion and add to skillet with drained beef. Cook over medium heat for five minutes. Add frozen chopped broccoli, stir and continue cooking over medium.
- Turn oven on to 400 degrees. Crush and chop garlic and add to skillet along with broccoli cheese soup and milk. Stir to completely blend.
- Pour rice into skillet and stir again. Spray a casserole dish with non-stick cooking spray and pour in rice and broccoli mixture. Place in oven.
- Bake for 45 minutes or until edges are crispy and top is brown.
