Ham and Egg Macaroni Oven Dish

Fluffy macaroni and cheese casserole with ham served with lemony broccoli.

Serves 4

Change the Serving Size

6 ounces macaroni
12 ounces ham
1 cup milk
2 eggs
1/4 teaspoon pepper
1/2 cup grated Parmesan cheese
1 pound broccoli
1/4 cup water
1 tablespoon & 1 teaspoon butter or margarine
2 teaspoons lemon juice
1/4 teaspoon pepper
non-stick cooking spray

Directions
  1. Heat water in a large saucepan on high for pasta.
  2. Dice ham and set aside.
  3. Add pasta to boiling water and stir. Continue cooking on high heat until pasta is tender (about 8 minutes).
  4. Preheat oven to 350 degrees.
  5. Spray a baking dish with non-stick casserole spray. Drain and rinse pasta and place in casserole dish along with diced ham.
  6. Beat milk, eggs and pepper together and pour over ham and pasta.
  7. Sprinkle Parmesan cheese over the top of the casserole and place in hot oven.
  8. When casserole has baked for 30 minutes, make Lemon Broccoli.
  9. Cut broccoli into large chunks. Place in a saucepan with water. Heat over medium heat until water begins to boil. Reduce heat to low and cover.
  10. When broccoli has steamed for 5 minutes, turn off burner and drain off any remaining water. Add butter or margarine and replace cover. Place on warm burner, but do not turn on heat.
  11. After one minute, stir broccoli to distribute melted butter or margarine evenly. Sprinkle in lemon juice and pepper and stir again.
  12. Serve Lemon Broccoli with casserole.
