Black Bean Tortilla Casserole

Serves 4

Change the Serving Size

4 corn tortilla
2 tablespoons olive oil
4 ounces red onion
4 ounces green bell pepper
2 cloves garlic
1 teaspoon red pepper flakes
1 dash cumin
1 cup salsa
1 15 1/2 ounce can canned black beans
8 ounces cubed cooked beef
4 ounces grated cheddar cheese

Grocery Shopping List for Black Bean Tortilla Casserole

From kitchen to table in

  1. Slice tortilla into 6 wedges.
  2. Heat oil in a skillet until very hot.
  3. Cook tortilla strips in hot oil until lightly browned. Drain on a paper towel.
  4. Turn off heat under skillet but save oil.
  5. Dice onion and green pepper and garlic. Sauté in skillet over medium heat until slightly soft.
  6. Add red pepper flakes, cumin and salsa. Stir to mix.
  7. Drain and rinse beans and add to skillet. Add cubed beef and stir.
  8. Preheat oven to 350 degrees.
  9. Line an oven-proof dish with crispy tortilla strips. Top with bean mixture.
  10. Sprinkle grated cheese over top and place in oven.
  11. Bake until cheese melts. About 15 minutes.
