Serves 4

Change the Serving Size

2 apples
1 cup flour
1 teaspoon baking powder
1 teaspoon cinnamon
1 cup milk
1 teaspoon honey
1/4 cup olive oil
2 eggs
2 tablespoons maple syrup
1 cup yogurt
2 cups milk
12 ounces strawberries
1 teaspoon honey
2 cups chipped ice

Directions
  1. Peel and dice apple. Submerge in cold water and set aside.
  2. Stem and dice strawberries and set aside.
  3. Blend flour, baking powder and cinnamon together in a mixing bowl.
  4. Turn non-stick electric griddle on to 375 degrees to preheat.
  5. In a separate bowl, mix milk, honey, olive oil and eggs and beat until fluffy.
  6. Stir into flour and mix just until blended (there will be some lumps).
  7. Drain apple pieces and fold into batter.
  8. Test skillet by placing a drop of water on the surface. Water will skitter across the pan when the temperature is hot enough.
  9. Pour pancake batter onto skillet. (Skillet can be lightly coated with oil if desired.)
  10. While first side of pancake cooks, place yogurt, milk, strawberries, honey and chipped ice in a blender.
  11. Flip pancakes when bubbles begin to burst and leave craters.
  12. Place lid on blender and mix on high for 10 to 20 seconds.
  13. When smoothie is blended, pancakes will be ready to serve with maple syrup.
